Bellpeppers with Quinoa

Ingredients

  • 1 cup Quinoa (cooked salt added while boiling)
  • 2 Bell peppers (Halved and deseeded)
  • 1 tbsp green Zucchini diced 
  • 1 tbsp yellow zucchini, diced.
  • 6 Cherry tomatoes (Halved)
  • 2 tbsp corn kernel
  • 2 tbsp Green Apple diced 
  • 4 tbsp Feta cheese cubed.
  • 1 tsp garlic chopped 
  • 1 tbsp Olive oil
  • Salt and Pepper (as per taste)

Preparations

  • Mix cooked quinoa with all the ingredients, (except olive oil)
  • Stuff the bell pepper halves with the quinoa mixture. 
  • pour olive oil on top.
  • Select vegetables And air fryer until done.
Cooking tip

Make sure the quinoa is not over cooked and add salt while boiling quinoa.
