A healthy yet delicious veggie dish, rich in protein, which makes for a appetizing meal.
Ingredients
- 2 cups kidney beans
- Salt to taste
- 4 cups water
- 1/2 cup capsicum
- 2 tomatoes
- 1/4 cup corn
- 2 onion
- Black pepper powder to taste
- 4-5 tbsp olive oil
- 1 lemon juice
- 1/4 cup coriander leaves
- 6-7 pieces of lavash
- 3-4 tbsp veg mayonnaise
- Lemon wedge
Preparations
- Add soaked kidney beans, salt and water to the Usha Electric Pressure Cooker. Cover with the lid and turn the knob to Bean mode. Once the knob resets itself to the Keep Warm mode, remove the kidney beans.
- Into a bowl; add half of the cooked kidney beans, capsicum, tomato, corn, onion, black pepper powder, salt, olive oil, lemon juice and coriander leaves. Mix the ingredients together.
- In another bowl add the remaining half of the cooked kidney beans, onions, tomato, capsicum, lavash pieces, veg mayonnaise, salt, black pepper powder and mix all the ingredients together.
- Garnish with lavash and a lemon wedge.
