Mixed Vegetable Curry
Ingredients
- 2 tbsp Yogurt
- 1 tsp Turmeric Powder
- 1 tbsp Red Chilli Powder
- 1 tsp Coriander Powder
- 1 tsp Garam Masala
- 1 tsp dry Mango Powder
- 1 tsp Mawana Premium Crystal Sugar
- Salt to taste
- 1 cup Potatoes
- 1/2 cup Green Peas
- 1/2 cup Carrots
- 2 tbsp Ghee
- 2 Bay Leaves
- 1 tsp Cumin Seeds
- 1 tbsp Whole Spices
- 1 cup Onion
- 1 tbsp Ginger Garlic Paste
- 1 cup Tomatoes
- Water as required
- Black Pepper to taste
- 1 tsp Kasuri Methi
- 1 tbsp Coriander Leaves
- Rice
- Red Bell Pepper
- Coriander Sprig
Preparations
- In a bowl add yogurt, turmeric powder, red chilli powder, coriander powder, garam masala, dry mango powder, Mawana Premium Crystal Sugar, salt and mix well. Add potatoes, green peas, carrot and mix.
- Heat ghee in a pan. Add bay leaves, cumin seeds, whole spices, onion, ginger garlic paste and cook.
- Add tomatoes and the marinated vegetables and mix well. Add water as required and cook the curry. Season with salt and black pepper and mix well. Add kasuri methi, coriander and stir.
- Serve hot with some rice and garnish with bell peppers and coriander.
