Aromatic Thai Green Curry, exotically green and deliciously healthy.
Ingredients
- 1 onion
- 1/2 inch ginger
- 1/2 inch galangal
- 1/4 cup basil leaves
- 1/4 cup coriander leaves
- 3-4 green chillies
- 2 tbsp lemon juice
- Water as required
- 2 tbsp oil
- 4 tbsp Thai brinjal
- 1 small carrot
- 3-4 French beans
- 4 tbsp mushroom
- 3-4 baby corn
- 1 tbsp lemon grass
- 300 gm boneless chicken
- 1 tsp dark soya sauce
- 1 tsp Mawana Super Fine Sugar
- Salt to taste
- 2 cups coconut milk
- Basil sprig
Preparations
- Add onion, ginger, galangal, basil leaves, coriander leaves, green chillies, lemon juice, water in a mixer jar and grind using the Usha Imprezza Plus mixer grinder.
- In a pan add oil, curry paste, thai brinjal, carrot, french beans, mushrooms, baby corns, lemon grass, boneless chicken and mix.
- Add dark soya sauce, Mawana Super Fine Sugar, salt, coconut milk and cook for sometime.
- Garnish with coconut milk and basil leaves.
